Meet Hubert Nicolás
Hubert Nicolás is a world-renowned coffee producer. With countless years of experience, Hubert recently served as a judge for the Cup of Excellence award as a QC grader. Additionally, working for Instituto Hondureño del Café (IHCAFE), Honduras’s leading nonprofit coffee institute. Here, he pushed the direction for current and future producers by providing technical assistance, education classes/ workshops, and research and development.
This past year, Hubert has begun helping producers differently. Opening his own roasting and quality control center called Nicolas Cafe, Hubert now helps producers find the perfect roast, find buyers, and work with exporters. Shifting his focus from the big picture to on-the-ground work. The Dynamite team was fortunate enough to visit Nicolas Cafe in Marcala for a special cupping on our 2026 trip. Now on his own, Hubert not only helps his fellow producer but still manages to produce some of the highest quality coffees.
