Miriam “Betty” Perez is an integral part of COMSA and an important member of the specialty coffee growing community in Marcala. Her family farm, Clave Del Sol, is named after the treble clef and her coffees truly sing. While her coffee is grown at a lower altitude than some of the other growers we work with, her attention to detail and organic growing practices lead to some really stellar coffees that are sweet, clean, and have vibrant acidity. She uses all organic fertilizers, is constantly planting shade trees, and doing everything in her power to protect the natural environment that her farm coexists with. She operates her own wet and dry mill on the farm to have greater control over the finished product and it truly shows in the cup. This is our seventh year working with Betty, and we have a wonderful natural processed lot from her we think you’ll love as much as we do.
